Organizational vs Enterprise Settings

I am not quite sure if this is the best place to ask this question. My school went ahead and signed a github educational agreement for a cloud offering. I believe this allows us to setup one organization which I did, SAML SSO with Azure AD. What I cannot find an answer to anywhere, is what the difference would be (as the educational cloud, is essentially enterprise without the support engagement) between having applied this config to the enterprise itself as opposed to directly on the organization? In theory, we will only have one org for the school, however I just want to make sure that I am not pinning us into a corner by doing it this way?

Setting up SAML SSO authentication at the enterprise account level will allow you to inherit the same configuration downstream to your organisations within the enterprise.

If you setup SAML SSO authentication at the organisation level, it gives you to flexibility to have different SAML SSO configuration on a per org level which may be useful for testing purposes or if you have multiple SSO IdP providers.
